Fried Green Tomatoes
Crush Perry's Original into crumbs and use it as a crispy coating for fried green tomatoes.
Ingredients
- 3 firm green tomatoes, sliced 1/4 inch thick
- 1 bag (2.5 oz) Perry's Original Pork Rinds
- 1/3 cup grated parmesan (optional)
- 2 eggs, beaten
- Salt and pepper
- Oil for frying
- Ranch or remoulade, for serving
Instructions
- 1
Pat the tomato slices dry and season lightly with salt and pepper.
- 2
Crush the pork rinds into fine crumbs in a zip-top bag or food processor. Mix in the parmesan if using.
- 3
Dip each slice in egg, then press into the pork rind crumbs to coat both sides.
- 4
Heat about 1/2 inch of oil in a skillet to 350°F. Fry the slices 2 to 3 minutes per side until golden.
- 5
Drain on a paper towel and serve hot with ranch or remoulade.
Pork rinds go soft fast once they're sauced or heated, so serve right away.
